Lipase is used on hydrolyzing triglyceride and fatty acid glyceride. It can hydrolyze fat into free fatty acid, glycerin and monoglyceride for animals' utilization. Lipase wildly consists in organisms and microorganism, which plays an important role in lipid metabolism process. Lipase was wildly used in food, pharmaceutical, leather, feed and detergent industry.

Fat is the most important energy source and it has special biochemical and physiological function. However, young animal couldn't secretion enough lipase. Low absorptivity of fat cause to animal intestinal diseases. 1 unit of lipase equals to the amount of enzyme, which hydrolyzes substance to get 1μmol titratable fatty acid in 1 min. at 40℃ and pH7.5.
